  • 500g cubed beef
  • 1 package french onion soup mix
  • 1 onion, chopped
  • 1 can of red kidney beans
  • 1/2 can refried beans
  • 2 tablespoons ground cumin
  • 2 tablespoons ground coriander seeds
  • ~1 tablespoon chopped coriander leaves
  • 1 teaspoon ground black pepper
  • 2 teaspoons chilli purée
  • 1 clove garlic, minced
  • 1 teaspoon chilli powder
  • 1/2 teaspoon cayenne pepper
  • 1 beef bouillon cube

sweat onions in a little oil over a medium heat until softened.   raise heat to high, and add beef – stir until well browned, and onions golden.   reduce heat to medium-high, add cumin, ground coriander seeds, chilli powder & purée, garlic, and cayenne pepper.   stir for a minute or two until everything well coated.   add onion soup mix, beans, and about 1 litre water.   bring to the boil, stirring frequently, and then cover, and simmer gently over a very low heat for a couple of hours, or until meat is tender.   add coriander leaves about 5 minutes before serving.

serve over boiled rice – serves 2.
